Apple Pie With Vanilla Sauce

Ingredients:

  • For the Pie:
    • 2 1/2 cups all-purpose flour
    • 1 cup unsalted butter, cold and cubed
    • 1/4 cup granulated sugar
    • 1/2 teaspoon salt
    • 1/4 cup ice water
    • 6-8 medium-sized apples, peeled, cored, and thinly sliced
    • 1/2 cup granulated sugar
    • 1/4 cup brown sugar
    • 1 tablespoon lemon juice
    • 2 tablespoons all-purpose flour
    • 1 teaspoon ground cinnamon
    • 1/4 teaspoon ground nutmeg
  • For the Vanilla Sauce:
    • 1 cup heavy cream
    • 1/4 cup granulated sugar
    • 1 vanilla bean, split and seeds scraped (or 1 teaspoon vanilla extract)
    • Pinch of salt

Instructions:

1. Prepare the Pie Crust:
  • In a large mixing bowl, combine the flour, granulated sugar, and salt. Add the cold, cubed butter and use a pastry cutter or fork to cut the butter into the flour mixture until it resembles coarse crumbs.
  • Gradually add the ice water, 1 tablespoon at a time, mixing until the dough comes together. Divide the dough into two equal portions, shape each into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
2. Make the Filling:
  • In a separate bowl, combine the sliced apples, granulated sugar, brown sugar, lemon juice, flour, cinnamon, and nutmeg. Toss until the apples are evenly coated. Set aside.
